Freezer Meals — Keepin’ It Easy

After taking a break from blogging for most of January, I’m back and ready to share a hint that has helped me through the chaos. As I wrote in my last entry, I took a short break from my blog during my final weeks of pregnancy. I’m happy to announce that my daughter was born on Jan. 20, and she’s doing wonderfully.

As any mom knows, the first couple of weeks after delivery can be tough. Not only do you have a newborn who needs your constant care, but your body is in recovery mode. One of the last things you feel like doing is cooking. Eating, however, is a different matter. It seems I’m constantly hungry. (I’m sure that’s at least partly due to breastfeeding. It feels like I am the milk cow these days.)

In preparation for these chaotic times of no energy and constant feedings and diaper changes, I had asked my mom to put up some freezer meals for me. I’m so thankful to her for all her hard work. It’s nice not to have to worry about the dinner dilemma on top of everything else.

I gave my mom several of my favorite freezer meal recipes to work from. You see, a couple years back, I took a sort of “freezer meal challenge” where I tried to make as many freezer meals as I could in one day. I ended up making 22 over the course of two days. I used 10 different recipes, just doubling or tripling some of them. The only reason I could make that many was because I had already done all the shopping in advance.

Honestly, I see no reason to cram all that cooking into one or two days. (The amount of dishes you pile up is enormous.) However, I do highly recommend making up some freezer meals to have on hand. They are great for any usual busy night where you know you won’t have time to prep something. And they are a lifesaver for those times where you know your life is going to be hectic.

There are plenty of websites out there that have freezer meal recipes. I will share one that I really like: My favorite meals from this site are the chicken enchiladas, homemade chicken pot pie, baked chicken pesto alfredo, cilantro lime chicken tacos, and slow cooker beef barley stew. I’ll leave you with one easy freezer meal recipe that’s also quite tasty.

Slow Cooker Beef and Broccoli Teriyaki

  • 1 cup soy sauce
  • 1 cup sugar
  • 1 tsp. garlic salt
  • ½ cup onion, chopped
  • 1 ½ lbs. beef stew pieces (sirloin pieces also work)
  • 1 bag frozen broccoli
  • 1 cup chopped mushrooms (optional)

Combine soy sauce, sugar, garlic salt and chopped onion, mushrooms, broccoli, and meat in a freezer gallon size bag. Freeze until needed. When ready to use, thaw and place in slow cooker for 8 hours on low or 4 hours on high. Serve over rice or noodles.
